Tropical Amaranth raita / siru keerai raita

INGREDIENTS

Ginger.                      1/2 inch
Small onions.             20
Tomatoes.                   4
Siru keerai.                  2 bowls
Curd.                             500 ml
Cummin seeds.           2 tsp
Salt
Grated coconut.          4 tsp
Green chilli.                 4

PREPARATION

Cut small onions, tomatoes, green chilli, ginger and finely chop the spinach.  Grind tomatoes, ginger, cummin seeds and green chilli.  Boil the chopped spinach with some water and boil it.  In a curd, add tomatoes paste, boiled spinach and salt in it.  If required you can add grated coconut, coriander leaves, carrot for more taste and flavor.
